Cheeseburger Casserole Reboot

I’m a huge fan of Gina Homolka and her blog Skinnytaste. My mother bought me her cookbook a while ago and it’s been an absolute lifesaver. She has so many wonderful family dinner recipes that taste amazing but cut back on the calories and fat. As a working actress I’ve always had to be mindful of my weight and staying trim but now that I’m pregnant, it’s become even more important to me to eat healthy nutritious foods that will nourish me and the baby. The beauty of Skinnytaste is that I get it all. Healthy family friendly meals that are delicious, nutritious and low in added fat and calories. July 4th Weekend

July 4th has always been a big holiday in my family. We gather, we eat, we celebrate and we revel in the sweetness of summer and all that it entails. Up in Utah July 4th marks the true, we don’t have to worry about frost or waking up to a late spring snowstorm, start of summer. Our ranch manager recently told me she and her husband love to use vinegar shrubs as a mixer in their cocktails. The subject came up because I had been telling her that I recently started drinking apple cider vinegar in water to help with the pregnancy indigestion I had been suffering from. I started really getting into cooking (and drinking I might add) when I was in my early twenties after a decade of being old enough to watch and learn from my mother. Nancy cannot only cook her ass off (and drink her ass off too), but she can put together and throw the most elegant and beautiful dinner parties. Taking a note out of her playbook I purchased every Martha Stewart and Carolyne Roehm book out there. Big Blind, Little Blind

When we built our barn we included a viewing room that has a full kitchen, dining table, sitting area, fireplace and bar. The idea was that we could host all kinds of events with the horses in their stalls right across the aisle. We’ve had Christmas parties, family and business dinners, holiday meals, and cocktail hours a plenty, but the one thing we had yet to host was a poker night. We had been dreaming of using the full bar as a place to gather, cut loose and play a little Texas Hold ‘Em since it’s completion, but hadn’t yet made it happen.
